Gutti vankaya curry is a popular Andhra-style recipe prepared with a special spice powder and is cooked in tamarind juice. Gutti vankaya curry is mainly prepared during festivals and weddings in Telugu states.
Ingredients:
- 12 Vanakaya
- 1 Onion
- Salt to Taste
- 1 tbsp Oil
- 1 tsp Turmeric Powder
- 1 tsp Chana Dal
- 1 tsp Urad Dal
- 1/2 tsp Mustard Seeds
- 1/2 tsp Cumin Seeds
- 2 or 3 Red Chillis
- 1 tbsp tamarind juice
- 1 tbsp Chana Dal
- 1 tbsp Urad Dal
- 1 tsp Coriander Seeds
- 1 tbsp Coconut
- 1/4 tsp Fenugreek Powder
- 1/4 tsp Cumin Seeds
- 2 or 3 Red Chillis
- 1 tbsp Chilli Powder
- 10 to 12 Garlic
- 2 or 3 Red Chillis
Ingredients for Masala:
Procedure for Masala:
- Heat 1 tsp oil in a kadai.
- Fry chana dal and urad dal.
- Then add coriander seeds and red chilli.
- Fry them till the aroma comes.
- Lastly add coconut and fry them.
- Keep aside for cooling.
- In a blender jar add all the ingredients along with red chilli powder.
- Grind all the ingredients to make a coarse powder.
- Add garlic and grind them again.
- Keep the powder ready.
Procedure for Curry:
- Slit vankayalu and put them in water to avoid decoloring.
- Chop onions.
- Soak tamarind in water and extract juice of it.
- Heat oil in a thick bottom kadai.
- Add slit vankayalu and 1/4 tsp salt.
- Cover and cook till they turn soft.
- Allow them to cool.
- Stuff the vankayalu with the above made masala powder.
- Heat oil in a kadai.
- Add chana dal, urad dal and mustard seeds and cumin seeds.
- Saute it till they splutter.
- Add chopped onions.
- Fry them till they are soft and translucent.
- Add salt and turmeric powder.
- Add the stuffed vankayalu to it.
- Fry them for a minute.
- Add tamarind juice and 1/2 cup water to make gravy curry.
- If you want dry curry just add tamarind juice.
- Allow it to cook for 2 minutes.
- Switch off the flame and transfer it to serving bowl.
- Serve gutti vankaya curry recipe with hot piping rice.
