Dondakaya Crispy Fry Recipe | How to make Dondakaya Fry | (Tindora fry recipe)

Hi friends, thank you for visiting my website and @EATeasyvegrecipes youtube channel. Today's recipe is dondakaya crispy fry. It is a very simple recipe I love very much.Dondakaya or tindora is a widely consumed vegetable and available through out the year. Though we get fresh and tender coccinia/dondakayalu only in December and January months. We get two varieties of them, one is light green colored, thin and long in size and shape. Second one is dark green colored, fat in size and short in shape. Dondakaya crispy fry is a dry curry and can be served as a side dish for rice. Kids too like it very much. Frying the dondakayalu on a low flame till they turn crisp takes longer time.

Dondakaya Crispy Fry

Dondakaya stir fry or dondakaya crispy fry -- kids favourite curry, anytime can be served with hot piping rice.

  • 1/2 Kg Dondakaya/Coccinia
  • 3 Tbsp Oil
  • Salt to Taste
  • 1 Tsp Turmeric Powder
  • 1 Tbsp Red Chilli Powder
  • 1 Tbsp Guntur Sambar Karam
  1. Wash dondakayalu/tindora thoroughly under running water.
  2. Slice them through lengthwise. They should very thin and look like long strips.
  3. Heat oil in a kadai till the fumes come out. Reduce the flame to medium level.
  4. Slowly drop all the Coccinia/Dondakaya pieces. Saute them for 5 minutes and cover with a lid.
  5. As the dondakaya pieces becomes soft remove the lid.
  6. Keep sauteing them for every 5 minutes till they are done.
  7. They tend to change the texture and colour when the dondakayalu done.
  8. Till such time we have to saute them ocassionally on a low to medium flame.
  9. Do not burn them.
  10. Use only spatula, do not use any other spoon for sauteing them.
  11. Add turmeric powder and salt. Saute them once.
  12. Switch off the flame and add chilli powders, red chilli and guntur sambar karam.
  13. Adding both chilli powders makes the curry more spicy and flavourful.
  14. Again saute them well.
  15. Serve dondakaya crispy fry recipe with hot piping rice.
