Hi friends, Thank you all for visiting my website and @EATeasyvegrecipes youtube channel. Today's recipe is ridge gourd coconut curry. Ridge gourd is called beerakaya in Telugu. Actually it is a combination of chana dal and coconut along with ridge gourd. It is the best accompaniment for rice. It is a no onion no garlic recipe.
Ridge gourd has many good qualities like rich in dietary fibers, vitamin C, riboflavin, zinc, thiamin, iron and magnesium. Ridge Gourd is quite lower in saturated fats and calories. It is the best option for weight loss journey.

Ridge Gourd Coconut Curry

Ridge gourd chana dal and coconut combo curry best accompaniment with rice.

Ingredients:
  • 500 Grams Ridge Gourd
  • 1 Tbsp Chana Dal
  • 2 Tbsp Fresh Grated Coconut
  • 3 to 4 Green chillis
  • Salt to Taste
  • 1 Tsp Turmeric Powder
  • 2 Tbsp Oil
  • 3 to 4 Curry Leaves
Procedure:
  1. Wash, Peel and cut ridege gourd into 2" cubes.
  2. Soak chana dal for half an hour.
  3. Cook soaked chana dal till it is 80% done.
  4. Or cook the dal till such that if we press it with finger, it should be soft.
  5. The dal should not become mushy.
  6. Once done drain the excess water from the dal and keep it aside.
  7. In a blender jar add freshly grated coconut and green chillis.
  8. Blend them to make a coarse paste. Do not over blend, we need only coarse paste not smooth one.
  9. Keep this coconut chilli paste aside.
  10. Heat oil in a kadai, add ridge gourd pieces.
  11. Add salt and turmeric powder. Add curry leaves.
  12. Mix it well. Cover and cook.
  13. Cook till the ridge gourd becomes soft and mushy. It may take 10 minutes.
  14. Once the ridge gourd pieces turns soft and mushy add boiled chana dal.
  15. Mix them well and let the moisture dries completely.
  16. Add coconut and green chillies paste.
  17. Mix it well and allow the curry absorbs the coconut taste.
  18. Cook for another 2 to 3 minutes. Remove from the fire.
  19. Serve ridge gourd coconut curry with hot piping rice.
