Kanda Bachali Ava Kura | How to make Kanda bachali kura | (Curry with elephant foot yam and malabar spinach leaves)

Kanda Bachali Ava Kura

Kanda bachali ava kura to be accompanied with hot piping rice.

Ingredients:
  • 300 grms Kanda /Elephant foot yam
  • 1 Cup Bachali Aku/Malabar Spinach Leaves
  • Salt to taste
  • 1/4 Tsp Turmeric Powder
  • 3 Tbsp Oil
  • 1 Tsp Black gram/Urad Dal
  • 1 Tsp Cumin Seeds/Jeera
  • 1 Tsp Asafoetida/Hing
  • 4 to 6 Curry Leaves
  • 1 Tbsp Rice
  • 1 Tbsp Mustard Seeds/Rai
  • 1/4 Tbsp Til
  • 5 to 6 Red Chillis
Procedure:
  1. Wash and peel the elephant foot yam/kanda. Cut into cubes.
  2. Finely chop bachali kura.
  3. Soak rice in water for 15 mins
  4. In a blender jar add soaked rice, mustard seeds, til and red chillis.
  5. While adding water grind them into a smooth paste. Keep it aside.
  6. Pressure cook kanda for 2 to 3 whistles.
  7. Once the pressure cools down, take the kanda and keep aside.
  8. In a kadai, add bachli kura/malabar spinach leaves.
  9. Add water, salt and turmeric powder to it.
  10. Allow this cook till the leaves turn soft.
  11. Once done, add cooked kanda and combine them well.
  12. Add grounded rice and mustard seeds paste.
  13. Combine all of them well and allow them to cook for another 2 to 3 minutes.
  14. In another kadai, add oil, black gram/urad dal, cumin seeds/Jeera.
  15. Once they start spluttering add red chilli pieces, curry leaves and hing.
  16. Add the above tadka to the cooking curry.
  17. Serve kanda bachali ava kura with hot piping rice.

Hi friends, Thank you all for visiting my website. Today's recipe is Dosakaya kachina pachadi or simply call it as dosakaya pachadi or yellow cucumber pachadi.
Dosakaya Kalchina Pachadi
I call dosakaya kalchina pachadi andhra style as kakkigari pachadi. The idea of dosakaya kalchina pachadi for rice was given by a great telugu writer #MullapudiVenkataRamana. In a book named Akshara he described about his life and living style. He narrated in that article saying that he was having a yellow cucumber or dosakaya creeper in his backyard during his childhood days. His mother or grandmother used to prepare different recipes with dosakaya like dosakaya pappu, dosakaya kura, dosa vorugulu(yellow cucumber chips that are sun dried), and also dosakaya kalchina pachadi recipe. I read about it long back and I liked the name of the recipe dosakaya kalchina pachadi. I tried it and from then onwards yellow cucumber pachadi recipe became a part in my menu.

Now let us come to the recipe. If we make this pachadi in mortar and pestle only, we get the proper taste. Of course making any pachadi using mortar and pestle gives a good taste. But we can make pachadi in mixer grinder also. If you use mixer grinder to make the pachadi use only 'pulse or whip' button.

Dosakaya Kalchina Pachadi

Kalchina dosakaya pachadi or dosakaya kalchi pachadi a good combination for hot piping rice.

Ingredients:
  • 1 medium size Dosakaya/Yellow Cucumber
  • 10 to 12 Red chillis
  • 1 Tbsp Black gram/Urad dal
  • 1 Tbsp Mustard Seeds/Rai
  • 2 Tbsp Oil
  • Salt to taste
  • 1 Tsp Turmeric Powder
  • Small pebble size Tamarind
  • 1/4 Tsp Asafoetida/Hing
  • 1 Tsp Fenugreek Seeds
Procedure:
  1. Soak tamarind with little water.
  2. Wash dosakaya/yellow cucumber and apply oil to avoid the burning of it.
  3. Put this on the flame directly or we can use a small grill plate.
  4. Burn the dosakaya on a low flame. Turning it in regular intervals.
  5. Let the skin of dosakaya completely turn into black.
  6. And if the dosakaya skin tears easily with a spoon, then the dosakaya roasted completely.
  7. Switch off the flmae and keep it aside.
  8. Remove the skin and cut into pieces.
  9. Heat oil in a kadai.
  10. Add 1/2 tbsp of each black gram, mustard seeds and fenugreek seeds.
  11. Let them splutter, then add asafoetida and red chillis.
  12. Keep the tadka aside.
  13. In the mortar and pestle, add the tadka and soaked tamarind.
  14. Mash it using the pestle for a minute.
  15. Mix it with a spoon and add salt and turmeric powder.
  16. Again mash it for another minute.
  17. Add half portion of chopped roasted dosakaya pieces, into the mortar.
  18. Now again mash them with the pestle till the dosakaya pieces become mushy.
  19. then again the remaining pieces and do the same.
  20. This would take 10 minutes to get the pachadi proper texture in the mortar and pestle.
  21. Scoop out the pachadi into a serving bowl and temper with tadka.
  22. Again heat oil in a small kadai, add 1.2 tbsp each of black gram, mustard seeds and fenugreek seeds.
  23. Once they start spluttering add hing, red chillis and curry leaves.
  24. Temper the above seaoning onto the dosakaya pachadi.
  25. Serve dosakaya kalchina pachadi with hot piping rice and ghee.

Rava Dosa Recipe

Rava Dosa -- instant tasty breakfast

Ingredients:
  • 1 Cup Upma Rava/Semolina
  • 1 Cup Rice Flour
  • 1/2 Cup Maida/All Purpose Flour
  • Salt to Taste
  • 1/4 Tsp Red chilli powder
  • 1 Tsp Finely chopped Green Chillis
  • 1 Tsp Finely chopped Ginger
  • 1 Tsp Cumin Seeds
  • Oil for making dosa
  • 2 Medium Finely chopped Onions (optional)
Procedure:
  1. Mix all the flours in a wide or large bowl.
  2. Add finely chopped green chillis and ginger.
  3. Add salt, red chilli powder and cumin seeds to the above rava dosa mix.
  4. Mix all of them well. Add water to make the batter.
  5. The rava dosa batter should be runny.
  6. Once we leave the batter without mixing for 5 minutes all the flours should settle in the bottom.
  7. Water in the batter should come up.
  8. That is how the consistency of the batter should be.
  9. Heat the iron dosa tawa, sprinkle some water to check the heat of the tawa.
  10. If the water evaporates immediately, then the heat of the tawa is perfect.
  11. Use a small tumbler to pour the dosa batter, as we cannot spread the dosa on the tawa with a ladle.
  12. Pour a tumbler full of rava dosa batter on hot tawa.
  13. Add a spoonful of oil, Sprinkle some onions (if adding).
  14. Allow the dosa to cook for 2 minutes.
  15. Once the dosa cooked it would leave the tawa.
  16. When it is leaving the tawa, flip the dosa and again cook for a minute.
  17. Serve hot crispy rava dosa with onion curry and coconut chutney.

Palak Rice

Palak Rice -- One pot flavourful meal for lunch box.

Ingredients:
  • 2 Cups Basmati Rice
  • 2 Cups Palak
  • 2 Medium size Onions
  • 100 Grams Paneer
  • 1/2 Cup Green Peas
  • Salt to taste
  • 1/4 Tsp Turmeric Powder
  • 1 Tsp Garam Masala Powder
  • 1/2 Tsp Coriander Powder
  • 1 Tsp Ginger Garlic Paste
  • 2 Green Chillis
  • 5 to 7 Cloves
  • 4" Long Cinnamon Stick
  • 2 Tbsp Oil
  • 2 Tbsp Ghee

  • Procedure:
    1. Wash and soak rice for half an hour.
    2. Wash and Chop palak.
    3. Slice onions and slit chillis.
    4. In a wide pan boil water and add chopped palak.
    5. Allow this to cook for 2 minutes.
    6. Drain excess water and let it cool for a while.
    7. Add the blanched palak to a blender jar and blend it to make a smooth paste.
    8. Keep it aside.
    9. Heat oil and ghee in a pressure cooker or electric rice cooker.
    10. Add whole masala, cloves and cinnamon stick.
    11. Saute them till they pop up.
    12. Add sliced onions and green chillis.
    13. Fry the onions till they turn translucent.
    14. Add ginger garlic paste, and fry again for 2 minutes.
    15. Add turmeric powder and salt. Mix them well.
    16. Add the palak paste and fry till the raw smell goes off.
    17. Add garam masala and coriander powder. mix them well.
    18. Add 4 cups of water to the above palak mix.
    19. for 1 cup rice add 2 cups of water, here I took 2 cups of rice so I am adding 4 cups of water.
    20. Add paneer and green peas. Mix them well.
    21. You can change the above measurements according to number of people you are serving.
    22. Cover the pressure cooker with lid. Or if you are using electric rice cooker cover it and keep it in cook mode.
    23. Cook for 2 whixtles in high flame and 1 whilste in low flame.
    24. Allow this to cool completley and mix well with a spatula.
    25. If you are using electric rice cooker, cook till it turns to warm mode.
    26. Serve palak rice with curd chutney or as it is.

    Cauliflower Mixed Vegetable Curry

    Cauliflower mixed vegetable curry is the best accompaniment for roti and rice.

    Ingredients:
    • 100 Grams Caulfilower
    • 2 Medium Onion
    • 1 Potato
    • 1 Carrot
    • 2 Tomatoes
    • 1 Green Chilli
    • 4 to 6 Curry leaves
    • 1 Tsp Turmeric Powder
    • 1 Tsp Garam Masala
    • 1 Tsp Red Chilli Powder
    • Salt to Taste
    • 1 Tbsp Oil
    • 1 Tsp Mustard Seeds
    • 1 Tsp Cumin Seeds
    • 1 Tsp Black Gram/Urad Dal
    Procedure:
    1. Separate the florets of cauliflower and soak them in warm water.
    2. With the above process we can remove small insects or germs in it.
    3. Peel the skin of carrots, potatoes and cut them into cubes.
    4. Cut tomatoes also into cubes.
    5. Slit the green chillis.
    6. Slice the onions in lengthwise.
    7. Heat oil in a kadai, add mustard seeds, cumin seeds and urad dal.
    8. Allow them to pop up.
    9. Once they start splutter add slit green chilli and curry leaves.
    10. Add onions and saute them for a minute.
    11. Add tomatoes and saute them till they turn mushy.
    12. Add turmeric powder and salt.
    13. Then add potatoes and carrots. Saute them well.
    14. Then add cauliflower. Saute them well.
    15. Add little water, cover and cook.
    16. Allow the cauliflower to cook.
    17. Add red chilli powder and garam masala powder.
    18. Mix it well and allow the vegetables to cook softly.
    19. Add little water if require.
    20. Once the vegetables cook softly, it is done.
    21. Serve cauliflower mixed vegetable curry recipe with rice or roti.

    Tomato Chutney Recipe

    Tomato chutney street style -- tastes good with idli and dosa.

    Ingredients:
    • 8 Medium size Tomatoes
    • 5 Green Chillis
    • 2 Red Chillis
    • Salt to Taste
    • 1 Tsp turmeric powder
    • 1 Tbsp Oil
    • 1 Tsp Mustard Seeds
    • 1 Tsp Black Gram/Urad Dal
    • Fistful of Coriander Leaves
    • Pebble size Tamarind.
    Procedure:
    1. Wash and cut tomatoes into pieces.
    2. Make pieces of green chillis.
    3. Heat oil in a kadai.
    4. Add mustard seeds and black gram.
    5. When they start spluttering add tomatoes, green chillis and red chillis.
    6. Add salt and turmeric powder.
    7. Add tamarind and coriander leaves too.
    8. Let the tomatoes cook softly and become mushy.
    9. The water in tomatoes should not be evaporated completely.
    10. Allow the tomatoes to cool.
    11. Add this tomato and green chillis mixture to the blender jar.
    12. Grind it to make a smooth paste.
    13. Add water and againd grind it to get watery consistency.
    14. Heat oil in a small kadai, add mustard seeds, urad dal and curry leaves.
    15. Once they start spluttering add this tadka to the above prepared chutney.
    16. Serve tomato chutney street style with idli or dosa.

    Maize Flour Dosa

    Maize flour dosa -- Instant dosa to make a healthy breakfast.

    Ingredients:
    • 1 Cup Maize Flour - 1 cup
    • 1/2 Cup Rice Flour - 1/2 cup
    • Salt to taste
    • 1 Tsp Red Chilli Powder
    • 1 small Onion (finely chopped)
    • 1 Green Chilli (finely chipped)
    • 4 to 6 Curry leaves
    • 1 Tsp Coriander leaves
    • 1 Tsp Cumin Seeds
    • Oil for making dosas
    Procedure:
    1. Chop onions, green chillies, coriander leaves and curry leaves.
    2. Mix rice flour and maize flour.
    3. Add salt, red chilli powder, chopped curry leaves and chopped coriander leaves.
    4. Add chopped onion and green chilli also to the flour.
    5. Mix them well and add water to it.
    6. Make thin dosa batter. The batter should be like that of rawa dosa.
    7. Heat dosa tawa. Sprinkle some water to check the heat of the tawa.
    8. Use tumbler to pour the batter to make the dosa.
    9. Pour a tumbler full of batter on hot tawa. Add oil to it.
    10. Cook for 2 minutes, flip it and again cook for two minutes.
    11. Cook on high flame only. Remove from the heat.
    12. Serve Maize flour dosa with any spicy chutney.

    Hi, Good Morning. Thank you friends and viewers. Today I will post how to make gobi paratha recipe.
    This is a punjabi recipe. I picked it from one of our far relatives, who have punjabi friends. They have the habit of exchanging each others recipes and prepared dishes sometimes. I like this gesture as it will make people acquaint with each other. That is how we can know each other's culture and traditions also.
    I have learned it in two ways one is mixing the grated cauliflower in wheat flour, adding all the spices and making roti. That is very simple. The other one is saute the grated gobi along with spice powders. Stuff this in the dough and make roti. Both are easy and tastes really good. They melt in the mouth. I like to have them in the dinner instead of breakfast. Serve them with a spicy pickle or raita or your choice curry too. I like them without any accompaniment also. Any paratha straight from the hot griddle to the serving plate is tempting and satiate.

    Cabbage Rice Recipe | How to make Cabbage Rice | Cabbage Fried Rice (Indian Style)

    Ingredients:
    • 1 and 1/2 Cups Rice
    • 2 Onions
    • 1 and 1/2 Cups Cabbage
    • 1 Potato
    • Salt to Taste
    • 1 Tsp Turmeric Powder
    • 1 Tsp Ginger Garlic Paste
    • 1 Tsp Garam Masala
    • 1/2 Tsp Coriander Powder
    • 4 to 6 Cloves
    • 3 to 4" Cinnamon Stick
    • 3 to 4 Tbsp Oil
    Procedure:
    1. Chop onions, potato and cabbage.
    2. Wash rice and add 3 cups of water. For 1 cup of rice add 2 cups of water.
    3. Pressure cook for 3 whistles.
    4. Heat oil in a kadai, add cloves and cinnamon sticks.
    5. When they start popping up, add chopped onions.
    6. Saute them till they translucent.
    7. Add potato and fry till they turn light brown.
    8. Add ginger garlic paste and fry for a minute.
    9. Add cabbage and fry them till the raw smell goes off.
    10. Add turmeric powder, salt, coariander powder and garam masala.
    11. Combine well and allow the vegetables to cook completley.
    12. Once done, add cooked rice and mix it well.
    13. Cook till the moisture in the rice goes off.
    14. Serve cabbage rice recipe with onion raita.

Boondi laddu is a special sweet made in marriages in Telugu states. Boondi ladoo is the most important sweet in marriages and will be distributed among friends. To make boondi ladoos at home we need to have a laddle which specially meant to make boondi. Normally it is called 'Boondi laddle' in Telugu states. It is a perforated plate with a lengthy handle. Normally boondi ladoo is made during Diwali festival also.

    Boondi Ladoo -- quick and easy sweet recipe

    Ingredients:
    • 2 Cups Besan
    • 4 Cups Sugar
    • 1 Tsp Cardamom Sugar
    • 1/2 Tbsp Cashew nuts
    • 1/2 Tbsp Raisins
    • Oil for Frying
    Procedure:
    1. Add water to besan and make batter.
    2. Let there should be no lumps in the batter.
    3. The batter should be runny.
    4. Heat oil in a kadai.
    5. Using boondi ladle pour the besan batter into the hot oil.
    6. Fry the boondi till it turns light yellow golden color.
    7. Keep the boondi aside.
    8. Repeat the same with the remaining batter.
    9. In a thick bottomed vessel mix water and sugar.
    10. Dissolve sugar in water and boil it. Stir occasionally, be careful, do not burn.
    11. Once the sugar syrup reaches one string consistency.
    12. Switch off the flame and add the prepared boondi into it.
    13. Combine it well.
    14. Add cardamom powder and fried cashews and raisins.
    15. Mix them well and allow this to cool for 15 mins.
    16. Once the boondi mixture cool to handle, mix it well again.
    17. Make ladoos of our desirable size.
    18. Press and roll the boondi to make ladoo.
    19. Serve boondi ladoo whenever you wish.

    Dibba Rotti Recipe | How to make Dibba Rotti | Dibba Rotti Andhra Style

    Hi friends, Thanks you all for visiting my blog. Today's recipe is Dibba rotti. It is a typical Andhra dibba rotti recipe. Dibba rotti or minapa rotti is a fat bread is made from urad dal or black gram and rice rawa. The basic dibba rotti is soft inside and crispy from outside. It will have thick crispy bottom layer which is all time favourite of kids. Some people make dibba rotti with idli batter. We have to use rice rava to get a soft and grainy texture. < br /> We get rice rava in the grocery stores, or we can prepare it at home also. We can make different recipes with rice rava. The measurements give would get dibba rotti for 8 people, so you can adjust the quantities according to the number of people consuming it.

    Dibba Rotti -- A traditional South Indian dinner recipe

    Ingredients:
    • 2 Cups Urad Dal
    • 4 Cups Rice Rava
    • Salt to Taste
    • 1/2 Cup Oil
    Procedure:
    1. Soak urad dal and rice rava separately for 3 to 4 hours.
    2. After four hours of soaking, grind the urad dal into a smooth batter.
    3. This may take 30 to 45 minutes time.
    4. Once it is grinded to smooth batter.
    5. Drain excess water from the rice rava.
    6. Add the rice rava to the urad dal batter.
    7. Mix it well and add salt.
    8. Mix it well again.
    9. Heat oil in thick bottom vessel or pressure cooker.
    10. We should heat the oil till the fumes come out.
    11. Pour the batter.
    12. Place a small bowl in the middle of the batter.
    13. This would make dibba rotti to cook completely, in the middle also.
    14. Remove the gasket of the cooker lid. Reverse the the lid and cover.
    15. Cook for 1 hour to 2 hours.
    16. Cooking depends on the quantity of the dibba rotti batter we pour in.
    17. For me it took 2 hours to cook.
    18. We have to cook on the small burner and in the low flame only.
    19. Then only the dibba rotti gets cooked completely.
    20. Once we pierce a knife or spatula, it should come out clean. Then only we should consider it is done completley.
    21. Once done, switch off the flame and remove the lid and let it cool for 5 minutes.
    22. Place a serving plate or a lide to cover the vessel and reverse it.
    23. If the dibba rotti cooked completley it would comes out completely without any breaks.
    24. Serve Dibba rotti hot or warm, with any spicy chutneys of our choice, I prefer it with Mango Pickle.

Tomato pulihora best suits who cannot take tamarind pulihora. Tomato pulihora can be made without tamarind at all also, here I added a litttle bit of tamarind. We can avoid that also. The main ingredient in this recipe is tomato. For the sour taste we need to add little tamarind. If we get country tomatoes with full of sour taste we need not add tamarind. Tomato pulihora is another rice recipe without onion and garlic.

    Tomato Pulihora

    Tomato Pulihora -- best to those who don't like tanginess of tamarind.

    Ingredients:
    • 3 cups Rice
    • 8 to 10 Tomatoes
    • Small pebble size Tamarind
    • 6 to 8 Green Chillis
    • 4" inches long Ginger
    • Salt to Taste
    • 1 Tbsp Turmeric Powder
    • 4 Tbsp Ground nuts
    • 1 Tbsp Chana Dal
    • 1 Tbsp Urad Dal
    • 1 Tbsp Mustard Seeds
    • 1 Tbsp Cumin Seeds
    • 5 Tbsp Oil
    • 1/2 Tsp Hing
    • 10 to 15 Curry Leaves
    Procedure:
    1. Wash tomatoes, green chillis and ginger.
    2. Slit green chillis. Finely chop ginger.
    3. Wash rice and add 6 cups of water, that is for 1 cup rice add 2 cups water.
    4. Pressure cook for 3 whistles.
    5. Once the cooker cools down, spread the rice in a wide plate and cool completely.
    6. Add a spoonful of oil to absorb all moisture from the rice.
    7. Cut tomatoes into pieces.
    8. Add tomatoes and tamarind into the blender jar.
    9. Make juice out of it. Do not add water.
    10. Sieve it to get a smooth juice.
    11. Heat oil in a kadai, add ground nuts.
    12. Allow them to pop. Then add chana dal and urad dal.
    13. Fry them till they turn light brown.
    14. Add mustard seeds and cumin seeds.
    15. When they start splutter, add hing.
    16. Add slit green chillis, chopped ginger and curry leaves.
    17. Saute them for a minute.
    18. Add this tadka to the above rice.
    19. Again heat oil in the same kadai, add the above prepared tomato juice.
    20. Allow this to boil for a minute.
    21. Add salt to taste. Mix it well.
    22. Allow this tomato jucie to boil till it become like a thick paste.
    23. This may takes 10 to 15 minutes.
    24. Once the tomato puree turns into a paste, add it to the rice.
    25. Combine all the tadka and tomato puree well with the rice.
    26. Serve tasty tangy Tomato Pulihora with curd.
