Hi friends, Today's recipe is Cabbage Pachadi Recipe. The Andhra cabbage pachadi recipe I made using mortar and pestle. Cabbage Pachadi recipe can be made using mixer jar also. Here I am presenting cabbage pachadi in Andhra style. Pachadi or chutney is the integral part of Telugu food menu. Everyday we need to have one roti pachadi or chutney made with mortar and pestle. Serve cabbage pachadi with hot piping rice.

Cabbage Pachadi Recipe

Cabbage Pachadi Recipe -- a best accompaniment for hot piping rice.

  • 1 Cup Cabbage
  • 2 Green Chillies
  • Salt to Taste
  • 1/2 Tsp Turmeric Powder
  • small pebble size Tamarind
  • 2 Tbsp Oil
  • 2 Tbsp Mustard Seeds
  • 2 Tbsp Black Gram
  • 1 Tsp Fenugreek Seeds
  • 10 to 12 Red Chillies
  • 1 Tsp Asafoetida
  • 4 to 6 Curry Leaves
  • Procedure:
    1. Chop cabbage finely and wash under water thoroughly.
    2. Soak tamarind in little water.
    3. Heat 1 Tbsp oil in a kadai, add 1 tbsp mustard seeds, 1 tbsp black gram, 1 tbsp fenugreek seeds and asafoetida.
    4. When they start spluttering add red chillies and saute them till they turn little dark.
    5. Keep this tadka aside.
    6. Again heat oil in the same kadai, add chopped cabbage and green chillies.
    7. Cook the cabbage till it become soft.
    8. Once done allow this to cool.
    9. Add the tadka to the blender jar, add salt, soaked tamarind and turmreic powder.
    10. Blend it once. Again add cooked cabbage and blend it again to make pachadi.
    11. If you are using mortar and pestle first mash the tadka along with salt, turmeric powder and tamarind.
    12. Then add the cabbage and green chillies. Mash it till the cabbage mashed completely. This may take 10 minutes time.
    13. once done take the cabbage pachadi into a serving bowl and temper with tadka.
    14. For tadka, heat 1 tbsp oil in a kadai, add black gram, mustard seeds, fenugreek seeds, red chillies, asafoetida and curry leaves.
    15. Once they start spluttering temper this on the cabbage pachadi.
    16. Serve cabbage chutney recipe with hot piping rice.
