Ridge Gourd Curry || Beerakaya Kura || How to make Beerakaya Kura

Ridge gourd curry is very tasty and easy to make. The vegetable has many good qualities like rich in dietary fibers, vitamin C, riboflavin, zinc, thiamin, iron and magnesium. Ridge Gourd is quite lower in saturated fats and calories. It can be consumed with rice and roti. 
This curry takes milk, so those who like the taste of milk only try it. :P

Ingredients:

Ridge Gourd - 500 grms
Onion - 1
Garlic - 5 to 7 pods
Milk - 1 cup
Salt - to taste
Turmeric Powder - 1 tsp

For Tadka:

Mustard Seeds - 1 tsp
Cumin Seeds - 1 tsp
Black Gram - 1 tsp
Bengal Gram - 1 tsp
Red Chillies - 2 
Green Chillies - 3 
Curry Leaves - 5 to 7

Procedure:

Peel the skin and cut them into cubes.
Chop onions, Slit green chillies.
Heat oil in a wok, Add all the ingredients under 'For Tadka".
When they start splutter add the garlic and onions. Fry them for 2 to 3 minutes.
Add ridge gourd pieces. mix well. Cook them till the gourd become soft. 
Add salt and turmeric powder. Add milk and cover it. Cook only in the lower flame. 
If we cook in the high or medium flame milk curdles very fast. So cook only in the lower flame.
Cook it till the milk mixes with the curry. The curry is in semi solid and semi liquid state. 
Serve Ridge Gourd Curry with roti and rice.
