Masala khichdi or masala rice khichdi is a comfort made in one pot with loads of vegetables and spices.
Ingredients:
- 1 cup Rice
- 1/2 cup Moong Dal
- 1/2 cup Carrot
- 1/2 cup French Beans
- 1/2 cup Green Peas
- 1/2 cup onion
- 1/2 cup tomato
- 1/2 cup Capsicum
- 4 tbsp Oil/Ghee
- 1 tsp Shahi Jeera
- 3 or 4 Cloves
- 3" long Cinnamon stick
- 1 green cardamom
- 1 Bay Leaf
- Salt to Taste
- 1/4 tsp Turmeric Powder
- 1 tsp Red chilli Powder
- 1 tsp Garam Masala
- 1/2 tsp ginger garlic paste
Procedure:
- Cut all the vegetables into cubes.
- Wash all of them under running water.
- Heat oil/ghee in a thick bottomed pan.
- Add shahi jeera, allow them to crackle.
- Add cloves, cinnmon stick, bay leaf and cardamom.
- And when they started crackling add chopped tomatoes and onions.
- After onions turn into translucent, add all the vegetables.
- Saute them for a minute.
- Add salt, turmeric powder and mix them well.
- Add ginger garlic paste and saute it for a while.
- Add moong dal and mix it again.
- Add 5 cups of water. For one cup of rice I have added 5 cups of water.
- Add water in the same measurements only.
- Otherwise the khichdi becomes very stiff and tight after cooking.
- Add rice too and mix it well.
- Add chilli powder, and garam masala powder.
- Mix them well and pressure cook it for 5 whistles.
- This masala khichdi is little loose like that of Pongali/Kattu Pongal.
- Once the pressure cools down, open the lid and mix it well.
- Allow this to cook for another 5 minutes.
- Serve hot and tasty masala rice khichidi with curd or spicy chutney.
