Sabudana Vada -- made during festival fasting and served with hot cup of tea and spicy green chutney.
Ingredients:
- 1/2 Cup Sabudana/ Saggubiyyam
- 1/4 Cup Peanuts
- 2 to 3 Green Chillis
- 3" Long Ginger
- 1 Potato
- Salt to Taste
- 1/2 tsp Cumin Seeds
- 1 tbsp Coriander Leaves
- 1 tsp Lemon Juice
- Oil for frying
Procedure:
- Soak sabudana for 4 to 5 hours.
- It can be soaked overnight also.
- Boil potato and mash it well.
- Chop green chillis, ginger and coriander leaves. Keep aside.
- Dry roast peanuts and remove the skin.
- Grind them coarsely. Keep them aside.
- In a wide mixing bowl add all the ingredients one after the other.
- Soaked sabudana, coarsely grinded peanuts, ginger, green chilli and coriander leaves.
- Add salt and cumin seeds.
- And lastly add lemon juice and mix all of them gently.
- Once all of them combined well, start kneading it gently.
- Knead it till it form a small ball.
- Once the sabudana vada dough mixed well to form a firm vada.
- Make all the dough into vadas.
- Keep them ready.
- Heat oil in a kadai.
- The oil should not be too hot.
- Drop each vada into the hot oil.
- Allow them to cook for a minute in low flame only.
- Slowly turn them after a minute only.
- Once the sabudana vada turn golden brown, transfer them onto a kitchen towel.
- Repeat the same with all of the them.
- Serve sabudana vada with green chutney or sauce.
