The generous amount of butter that is often used with freshly-cut onions and lemon juice tops the dish. Pav Bhaji is also a great way to feed fussy kids their share of veggies with a smile.
Ingredients:
- 1/2 cup Carrot
- 1/2 cup Potato
- 1/2 cup French Beans
- 1/2 cup Peas
- 1/2 cup Beetroot
- 1/2 cup Cabbage
- 1/2 cup Capsicum
- 1/2 cup Cauliflower
- 1 cup Onion
- 1 Cup Tomato
- Salt to Taste
- 1 tsp Turmeric Powder
- 1/2 tbsp Red chilli Powder
- 1/2 tbsp Garam Masala Powder
- 1/2 tbsp Coriander Powder
- 1 tsp Aamchur Powder
- 1 tbsp Pav Bhaji Masala Powder
- 1 tbsp Ginger Garlic Paste
- 2 tbsp Oil
- 2 tbsp Butter
- 18 pieces Pav buns
Procedure:
- Chop all the vegetables like carrot, beans, potatoes, beetroots and cabbage.
- Chop capsicum, split cauliflower florets.
- Chop onion and tomatoes and keep them aside.
- Pressure cook all the vegetables with a little salt and turmeric powder added into it.
- Cook them for 5 to 6 whistles.
- Once the pressure goes off put all the vegetables in a colander to drain excess water.
- Collect this water and keep aside for further use.
- Mash the vegetables using a masher. Keep them aside.
- Heat oil and butter in a wide pan.
- Add ginger garlic paste and saute it for a minute.
- Add chopped onions and fry them till they become translucent.
- Once the onions become soft, add chopped tomatoes.
- Cook them till they are soft and mushy.
- Add salt and turmeric powder.
- So that the onions and tomatoes cook faster.
- Add mashed vegetables, combine them well.
- Add red chilli powder, coriander powder, garam masala powder, aamchur powder and pav bhaji masala.
- Mix them well so that all the spices blend well with the vegetables.
- Add water, it is collected from the cooked vegetables.
- Mix it well and allow bhaji to cook for 5 to 7 minutes.
- Check salt and add if required.
- Let the bhaji turns into a semi solid consistency, sprinkle little chopped coriander.
- Slit the pav bun in the middle.
- Heat roti tawa, wide open the pav buns and put them on tawa.
- Apply 1 spoonful of butter and cook a minute.
- While serving bhaji sprinkle chopped onions and coriander leaves.
- Serve hot pav bhaji with chopped onions and coriander leaves.
