Aloo Kurma Recipe -- A best accompaniment for vegetable pulao and chapati.
Ingredients:
- 150 Grams Potatoes
- 100 Grams Onions
- 1 Tomato
- 1 Tbsp Oil
- Salt to Taste
- 1 Tsp Turmeric Powder
- 1 Tsp Red Chilli Powder
- 1 Tsp Garam Masala
- 1 Tbsp Tamarind Juice
- 1 Tbsp Kurma Masala
Ingredients For Kurma Masala:
- 1 Tbsp Fresh Coconut Pieces
- 1/2 Tbsp Coriander Seeds
- 1/4 Tbsp Poppy Seeds/Khus Khus
- 2" long Cinnamon Stick
- 4 to 5 Cloves
- 1 Small Onion
- 2" Long Ginger
- 5 or 6 Garlic
Procedure:
- Peel the skin and cut potatoes into cubes.
- Pressure cook potatoes for three whistles.
- Chop onions in lengthwise. Cut tomato into four or six portions.
- In a blender jar add all the ingredients listed under Kurma Masala.
- Make a smooth paste of them.
- Heat oil in a kadai, add mustard seeds and cumin seeds.
- When they splutter add onions and tomatoes.
- Fry them till the onions become soft and translucent.
- Add salt and turmeric powder so that the onions fry faster.
- Once the onions become soft and tomatoes mushy, add grounded kurma masala.
- Add red chilli powder, garam masala and mix them well.
- Add tamarind pulp to it.
- Add boiled potatoes.
- Add 2 cups of water and mix them well.
- Allow this to cook well or until the masala absorbs all the water.
- Serve aloo kurma with vegetable pulao or chapati.
