Groundnut Chikki Recipe -- How to make Groundnut Chikki

Hi, Thank you, friends and viewers. Today I will post how to make groundnut chikki recipe.
It is a simple and easy recipe made with groundnuts and sugar. Chikkis or brittles are nothing but a sweet candy. Groundnut Chikki is an easy and delicious sweet made with caramelised sugar and roasted peanuts. The trick of making this easy recipe involved in sugar syrup making. If we get it in right consistency, then the chikki would turn into a wonderful and tasty one. We should be able break it into small pieces easily, should not be squashy.
I have learned this chikki preparation from my maternal aunt, who is expert in it. Whenever we have family gatherings, she would bring this chikki and serve it. We all would love to have it. she used to cut them into a perfect squares without any measuring tape. We can make chikkis with sesame seeds, and cashewnuts also.



Groundnut Chikki

Groundnut Chikki Recipe -- Easy and delicious candy made with caramelised sugar syrup.

Ingredients:
  • 1 Cup Groundnut/Peanuts/Palli
  • 1 Cup Sugar
  • 1 Tablespoon Ghee
Procedure:
  1. Dry roast peanuts/groundnuts in a thick bottomed kadai till they turn light golden colour.
  2. Keep them aside for a while. When they cool enough to handle, rub with the palms, so that the skin can be removed easily.
  3. Remove the skin of groundnuts and keep them available. We can do this process before hand also.
  4. In a thick bottomed kadai, add a spoonful of ghee and then add sugar.
  5. Keep stirring it continuously on a low to medium flame.
  6. The sugar melts and turns into a golden brown color syrup, now it is caramelised.
  7. Without stopping stirring, pour the groundnuts and mix them well.
  8. Drop a spoonful of ghee in a plate or on the clean surface. Pour the hot sugar, groundnut mixture.
  9. Apply little ghee to the rolling pin, roll the mixture to make a 6-8mm thick flat slab.
  10. Allow this to rest for a minute or two, then mark vertical and horizontal lines to draw squares with a pointed knife.
  11. Allow this to cool completely and break them into squares. Eat and enjoy them whenever you want.
