A very simple and easy dish. Coconut rice is a dish prepared by plain rice cooked in flavoured coconut milk. Of course it tastes really good. Bagara tomato, Bagara baingan or Aloo kurma are the best accompaniments to it. It needs very less ingredients also.
Ginger - 3" inches long
Garlic Cloves - 6 to 8
Rice - 1 cup
Salt - to taste
Oil/Ghee - 2 tbsp
Cloves - 2 to 4
Cinnamon - 2" long
Green Chillies - 3 or as per taste
Remove the coconut from the shell, peel the brown portion and cut it into small pieces. Add garlic and ginger to it.
Grind it to a fine paste by adding required amount of water. Strain it to get clear thick coconut milk. We can use juice strainer or a clean thin kitchen towel to strain. We can get some more thin milk by re-grinding it second time, but it is useless. This is the flavoured coconut milk. Keep it aside.
In the pressure cooker or electric rice cooker heat oil or ghee. Add cloves, cinnamon and split green chillies. When they start splutter add rice and just mix it. Add flavoured coconut milk to it. Add salt and mix it well.
Allow this to cook. If we use pressure cooker cook it for three whistles or using electric cooker just allow it to cook till done.
For one cup of rice we need two cups of water. In the place of water we use the above made coconut milk.

The amount of milk to be added depends on the amount of rice. For one cup of rice use two cups of milk. Even if the milk is little less also no problem, just mix balance of water to it.
Once done mix it well and serve it with bagara baingan, bagara tomato or aloo kurma.
