Chutney with skin like bottle gourd, ridge gourd, and carrot is very common in my house. I keep preparing them whenever the skin is tender and fresh. The skin should be soft enough to cut easily. Add tomatoes and green chillies to get nice tangy and spicy taste. They are fiber rich. Sometimes I mix all of them and add some greens also like methi/fenugreek leaves or muli leaves/radish leaves or fresh coriander leaves.

Bottle Gourd Peel Chutney

Ingredients:
  • 1 Cup Chopped Bottle Gourd Peel
  • 2 Tomatoes
  • 2 Green Chillies
  • Salt to Taste
  • 1 Teaspoon Turmeric Powder
  • 2 Tablespoon Oil
  • 1 Teaspoon Mustard Seeds
  • 1 Teaspoon Fenugreek Seeds
  • 1 Teaspoon BlackGram
  • 10 to 15 Red Chillies
  • 1/2 Teaspoon Asafoetida
  • Fistful of Coriander Leaves
  • Goose Berry size Tamarind
Procedure:
  1. Chop bottle gourd peel and cut tomatoes.
  2. Heat oil in a pan, add mustard seeds, fenugreek seeds and blackgram. Fry them for a while.
  3. Once they started spluttering, add red chillies and asafoetida.
  4. Fry them and keep it aside.
  5. Again heat oil in the same kadai, add green chillies, coriander leaves, tomato pieces and chopped bottle gourd peel.
  6. Add turmeric powder and salt. Add little water and cook till the peel become soft.
  7. Let the water also evaporates fully.
  8. Allow this to come to room temperature.
  9. Combine all this to a blender jar along with red chillies, some portion of seasoning and tamarind.
  10. Blend it to a coarse paste. Add water if necessary, do not add more water.
  11. Season it with the rest of the seasoning.
  12. Serve bottle gourd peel chutney with hot piping rice.
