Hi, Good Morning. Thank you friends and viewers. Today I will post how to make Ponnaganti Aaku Koora Recipe.
Ponnaganti Aaku Koora
Ponnganti Aaku is rich in iron. This is mainly available only in South India. It is known as Water Amaranth, Sessile Joy Weed or Dwarf Copperleaf.


Ponnganti Aaku Koora



Ingredients:
  • 3 Cups Ponnaganti aaku/
  • 2 Tablespoon Red Gram
  • 1/4 Teaspoon Mustard seeds
  • 1/4 Teaspoon Cumin seeds
  • 2 Red chillies
  • 5 to 6 Curry leaves
  • Salt to Taste
  • 1/2 Teaspoon Turmeric powder
  • 1/2 tsp Asafoetida(hing)
  • 2 Tablespoon Oil
Procedure:
  1. Discard ponnaganti aaku from the stem and chop it finely.
  2. Cook red gram till it is half boiled, drain excess water.
  3. Heat oil in a kadai, add a pinch of asafoetida, put mustard seeds, cumin seeds, curry leaves and red cillies.
  4. Once they start splutter add chopped ponnaganti aaku, salt and turmeric powder.
  5. Sprinkle a little water. Cook for 10 minutes or till the leaves cooked completely.
  6. Once the leaves cooked add half boiled red gram to it.
  7. Stir well and cook for 2 minutes.
  8. Serve ponnaganti aaku kura with hot rice.
