Veg Manchurian Recipe -- How to make Veg Manchurian at home

Veg Manchurian is the most fascinating dish for kids. Of course, Indo-Chinese vegetarian recipes always attracts kids. They are very easy to when we have all the necessary vegetables available. Though we need to have a lot of patience to chop or grate them.
Make small dumplings with veggies, fry them in hot oil. Cook them in sauces and serve them immediately. Juicy inside and crispy outside veg dumplings accompanies best with Veg Fried Rice, Hakka Noodles, or just have it as an evening snack item.

Serve the Indo-Chines recipes as a side dish to rice, roti or even serve them as an evening snack. I have picked the recipe from different cookbooks and websites.



Veg Manchurian

Ingredients for Veg Dumplings:
  • 1 Cup Grated Carrot
  • 1 Cup Grated Cabbage
  • 1 Cup Chopped Spring Onion
  • 1/4 Cup Chopped French Beans
  • 1/4 Cup Chopped Capsicum
  • 1 Tablespoon Chopped Ginger
  • 1 Tablespoon Chopped Garlic
  • 1/2 Tablespoon Chopped Green Chillies
  • 2 Tablespoon Corn Flour
  • 1/2 Tablespoon Red Chilli Paste
  • 1/4 Teaspoon Ajnimoto
  • Salt to Taste
  • Oil for Frying
Ingredients for Manchurian Sauce/Gravy:
  • 3 Tablespoon Oil
  • 1 Cup Vegetable Stock
  • 1/4 Cup Chopped Spring Onion Whites
  • 1/2 Tablespoon Chopped Ginger
  • 1/2 Tablespoon Chopped Garlic
  • Salt to Taste
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Tomato Sauce
  • 1/2 Tablespoon Red Chilli Sauce
  • 1 Tablespoon Corn Flour
Procedure For Dumplings:
  1. In a wide bowl mix all the chopped and grated veggies.
  2. Add salt and also all other ingredients listed under 'Ingredients for Dumplings", except oil.
  3. Mix them well, do not add any water. This will turn into a moist dough.
  4. Make small lemon size balls with the dough.
  5. Heat oil in a kadai, slowly drop each dumpling into the hot oil.
  6. Fry them in low medium flame till they turn into light golden brown.
  7. Keep them on a kitchen napkin aside.
  8. We can store these dumplings for further use also, kids like them very much.
Procedure For Dumplings:
  1. Heat oil in another kadai, add chopped ginger and garlic.
  2. Fry them for a while.
  3. Add chopped spring onion whites, fry them till they turn soft.
  4. Add soy sauce, tomato sauce and red chilli sauce. Give a nice saute.
  5. Then add water or vegetable stock.
  6. Check salt and add it if necessary.
  7. Add the above fried veg dumplings, allow them to boil in the sauce for 2 minutes.
  8. Add water to corn flour and mix well to avoid lumps.
  9. Add this slurry to the above sauce to get it thicken.
  10. Transfer it into a serving bowl, temper it with some chopped spring onion greens.
  11. Serve hot, spicy veg manchurian with Hakka Noodles or Veg Fried Rice.

Instant variety of tomato dosa recipe is already there on the blog. This is another variant recipe. This is made exactly or almost like that of neer dosa recipe with a little differentiation, like instead of coconut we add tomato pieces to the batter.
Ah!! I have given the gist of the dosa recipe. Still, the detailed text will be given below.
This recipe I picked from a youtube channel. The recipe calls for grinding tomatoes with the rice itself, but we can grind it separately. I did like that, first grind tomatoes in the mixer grinder then add the juice to the grinding rice.



Tomato Dosa

Tomato Dosa Recipe -- best breakfast recipe

Ingredients:
  • 1 Cup Rice
  • 6 to 8 Medium Tomatoes
  • Salt to Taste
  • 1 Teaspoon Cumin Seeds
  • 1 Large Onion
  • 2 Green Chillies
  • 3" Ginger
Procedure:
  1. Soak rice for overnight.
  2. Grind it to a fine paste. We can grind it in the table-top wet grinder.
  3. Meanwhile, grind the tomatoes in the mixer grinder. Sieve it and get the juice.
  4. Add the tomato juice to the grinding rice batter.
  5. Add salt, chopped onions, green chillies and ginger pieces.
  6. Mix it well, make the batter thin enough to pour it on tawa.
  7. The batter consistency should be like that of rawa dosa.
  8. Heat iron or non-stick griddle, sprinkle some water to check the heat of tawa.
  9. Pour the batter with the help of tumbler, in this process we can spread the batter evenly all over the tawa.
  10. Add a spoonfull of oil all over the dosa. Cook for a minute, when the dosa edges leave the tawa, slowly lift it with the help of a spatula.
  11. Flip the dosa and cook for another minute. Take off from the tawa and serve.
  12. Serve tomato dosa with onion chutney and coconut chutney.

Sweet Corn Soup Recipe -- How to make Sweet Corn Soup

Hi, Thank you, friends and viewers. Today I will post how to make sweet corn soup recipe.

Warm and satiating soups are always liked by all on chilly evenings. It not only satiates our taste buds but also improves digestion. I like home made soups always. My most favourite soups in this season are tomato soup and carrot soup. I am bored of them now, so trying new recipes from my old cookbooks and from different recipe blogs.


Sweet Corn Soup



Ingredients:
  • 1 Cup Sweet Corn Kernels
  • 2 Tablespoon Chopped Carrot
  • 1 Tablespoon Chopped French Beans
  • 2 Tablespoon Chopped Spring Onion Greens
  • 1 Tablespoon Chopped Spring Onion Whites(bulbs)
  • 1/2 Tablespoon Chopped Garlic
  • 1/4 Tablespoon Chopped Green Chillies
  • Salt to Taste
  • 1 Tablespoon Butter
  • 1/2 Tablespoon Corn Starch
  • 1/2 Tablespoon Pepper Powder
  • 1 and 1/2 Cup Vegetable Stock and Water
Procedure:
  1. Grind 1 tablespoon of corn kernel into coarse paste.
  2. Heat butter in a thick bottomed vessel, add chopped garlic and saute it.
  3. Add in chopped carrots, french beans and spring onion whites. Saute them for a minute.
  4. Add grinded corn paste and saute it also for less than a minute.
  5. Add in corn kernels and pour in water or vegetable stock. Vegetable stock is always tastes good.
  6. For vegetable stock recipe link is given in the ingredients list.
  7. Add salt and bring this to a rolling boil on a medium flame.
  8. Simmer the flame and add pepper powder. Let it boil for a minute.
  9. Drop in spring onion greens and let them boil.
  10. Add corn flour in water and mix it well to make slurry without lumps.
  11. Slowly while stirring the soup, pour in the corn starch into it.
  12. Check the consistency and taste. Decorate it with a spoonfull of chopped spring onion greens.
  13. Enjoy!! hot sweet corn soup on a cold wet night.

Vegetable Stock Recipe -- How to make Vegetable Stock at home

Hi, Thank you, friends and viewers. Today I will post how to make vegetable stock recipe.
Vegetable broth or stock is made from boiling of vegetables in a thick bottomed pan. Once all the vegetables get cooks for half an hour to 45 minutes, drain them and extract water. This can be stored in refreigerator for 7 to 9 days. It is used in most of the Indo-Chinese recipes and also in soups. There is no specific measurements for this recipe, we can add as many vegetables as possible. But main important rule we have to remember is do not add strong flavoured or tasted vegetable.

Ingredients:
  • 1 Red Bell Pepper
  • 1 Yellow Pepper
  • 1 Capsicum
  • 1 Onion
  • 5 Spring Onions
  • 2 Bay Leaves
  • 5 Cauliflower Florets
  • 5 Broccoli Florets
  • 1 Carrot
  • 2" Ginger
  • 5 Garlic Cloves
Procedure:
  1. Wash and cut all the vegetables. Just make three or four pieces of each vegetable, no need to concentrate on the size and shape of them.
  2. In a thick bottomed vessel or kadai, add in the vegetables.
  3. Pour three to four cups of water or till the veggies immerse.
  4. Let this boil for thirty(30) minutes to forty five(45) minutes in medium to low medium flame.
  5. Do not cover the vessel and just give gentle mix ocassionally.
  6. Once cooled, collect the water by straining it into another vessel.
  7. Allow this to come to room temperature and store in an airtight container.
  8. This stock can be stored for 7 to 9 days, if refrigerated.
  9. Use it in soups, Indo-Chinese recipes.

Cream of Broccoli -- How to make Broccoli Soup Recipe

Hi, thank you, friends and viewers. Today I will post how to make Cream of Broccoli soup recipe.
In 2017, last day of the year I have tasted this soup in Taj Deccan, Hyderabad. That day it was chilly outside and we have done a lot of shopping. We both, me and Saye, were very much hungry, so we thought this would be the best place to sit and enjoy our dinner peacefully. Because it was 30th Dec lot of year-end parties were going on, "sound" party mood everywhere around. I want some quiet place to enjoy my dinner, So Saye took me there. It was a nice and decent place to sit and chat. The service is also nice, not only they take our order, they also guide us through the menu card. The steward suggested us on the quantity of food should we order so there won't be any wastage. Liked it very much.
I asked him to serve me something soothing and warm and also should not heavy on my tummy. So he offered this Broccoli soup, which was really soothing, warm and of course enough to control my hunger till we order the main course.

Cream of Broccoli

Cream of Broccoli -- Broccoli soup

Ingredients:
  • 1/2 Kg Broccoli (20 Florets approx.)
  • 2 Tablespoon All Purpose Flour
  • Salt to Taste
  • 1 Teaspoon Black Pepper Powder(can adjust according to one's choice)
  • 8 to 10 Garlic
  • 1 Tablespoon Butter
Procedure:
  1. Separate broccoli or cut it into florets and wash them thoroughly.
  2. It is always good to wash it in warm water.
  3. Heat butter in a pressure cooker, add chopped garlic. Saute them for a minute.
  4. Add all purpose flour and saute it too till the raw smell goes off.
  5. Add a cup of water and drop in broccoli florets.
  6. Pressure cook them for 3 to 4 whistles. Let it cool.
  7. Once the pressure goes off and it cooled completely, blend this mixture in a blender jar to make a smooth paste.
  8. Strain the soup using a juice strainer. Pour the cream of broccoli into a thick bottomed vessel.
  9. Add salt and black pepper powder to it. Add water or milk to it if it is too thick.
  10. Let it boil for 3 to 5 minutes, stirring ocassionally.
  11. Keep stirring it, otherwise you will end up in burning it.
  12. Enjoy!! hot cream of broccoli or broccoli soup with a roasted bread slice.

Foxtail Millet Kheer Recipe -- How to make Korra Biyyam Payasam

Hi, Thank you friends, and viewers. Today I will post how to make foxtail millet kheer recipe.

Millets are good for health. They can be consumed in different ways, make roti, dosa, kichidi or upma, and also try to make kheer with them.
Foxtail millet or Korra biyyam or Korralu, I have tasted them for the first time, when we were traveling from Hyderabad to Vijayawada, in a road-side restaurant. They serve food in plantain leaves and water would be served in clay tumblers or kullad. It was really an awesome feeling like having a healthy and tasty food outside that too in a healthy way. First, they serve some dessert with millets, that day it was foxtail millet kheer. I liked it very much, it was not too sweet and nor it was heavy on the tummy. After returning from the trip, I tried it. It is very easy to make and takes very less ghee or clarified butter and we have to prepare it with jaggery which is again good for health. New bees can also make it easily without any expertise. Interestingly kids also love it very much.



FoxtailMilletKheer



Ingredients:
  • 1 Cup Foxtail Millet/Korra Biyyam/Korralu
  • 2 Cups Jaggery/Bellam
  • 1/2 Cup Milk
  • 1/2 Cup Fresh Coconut
  • 1 Teaspoon Cardamom Powder
  • 10 to 15 Cashew Nuts
  • 10 to 15 Raisins
  • 1 Tablespoon Ghee/Clarified Butter
Procedure:
  1. Wash and soak foxtail miller/Korra biyyam for half an hour to one hour.
  2. Pressure cook it for three to four whistles. Or we can cook it separately in a thick bottomed vessel also.
  3. I cooked it in a thick bottomed vessel, though it took 15 to 20 minutes time.
  4. Once the millet cooked softly add milk and jaggery to it.
  5. Give a nice mix and let the jaggery melts completely and the millet turns into a soft porridge.
  6. Add grated coconut and allow this cook for a while.
  7. Heat ghee in another kadai, fry cashew nuts and raisins till they turn golden color.
  8. Add cardamom powder to the millet porridge. Mix it well.
  9. Lastly add fried cashew nuts and raisins and give thorough mix.
  10. Isn't it so simple to make!!! Serve foxtail millet kheer hot or warm.

Carrot Halwa Recipe -- How to make Gajar Ka Halwa

Hi, Thank you, friends and viewers. Today I will post how to make gajar ka halwa recipe.

Gajar ka halwa is the season's best sweet made as new year special at my home. Gajar means Carrot in Hindi. We get a good carrot in this season, red gajar or carrot is a special vegetable available in the winter. Gajar ka halwa made with red carrot, of course we can use regular carrot also, but red carrot has sweeter than the regular one and also nice tempting color. Every December 31st I prepare this sweet and distribute among friends and neighbors. To get the rich taste we use khoya/kowa/mawa instead of milk, but we can use whole milk also.
Now coming to the recipe, I prefer to use a hand grater for grating carrot, instead of mixer grinder or food processor. We need to saute the carrot till we get the nice aroma of it, otherwise, the raw smell will be there. Do not add more sugar as the carrot have some sweetness in it and adding milk or mawa gives sweetness, so take care not to add more sugar.





Carrot Halwa

Carrot Halwa Recipe -- Pudding made with Carrot or Red Carrot.

Ingredients:
  • 250 Grams Red Carrots/Carrot
  • 100 Grams Sugar
  • 300 Ml Whole Milk Or 150 Grams Mawa/Kova/Khoya
  • 50 Grams Ghee
  • 50 Grams Cashew Nuts
  • 10 Grams Raisins
  • 10 Grams Almonds
  • 1 Teaspoon Cardamom Powder
Procedure:
  1. Wash, peel and grate red carrots or carrots using hand grater.
  2. Heat ghee in a thick bottomed vessel or Kadai, saute the carrot till the rawness goes off. By this way itself the carrot gets cooked.
  3. Add milk, if using mawa add it here. Let it cook for 10 to 15 minutes.
  4. By this time, if using milk it gets thicken or if using mawa it mixes with carrot well.
  5. Add sugar and cook for 10 mins or till the sugar melts.
  6. In another kadai, add ghee and fry cashew nuts and raisins till they turn golden colour. Keep them aside.
  7. Once the carrot cooks and the milk or mawa added gets cooked add cardamom powder. Give a nice mix.
  8. Add the fried cashew nuts and raisins aslo. Mix well.
  9. Serve carrot halwa hot or warm during any occasion.

Sankranthi Special Recipes -- Pongal Festival Special Recipes

Hi, Thank you, friends and viewers. Today I will make a simple post on Sankranthi or Pongal special recipes.
Pongal, Makara Sankranthi is a harvest festival in India. It is celebrated during the mid of January every year. During this season houses are decorated with flowers, and front yard of every house is decorated with colourful rangoli or kolam or muggulu.
This is a four-day long festival. People mainly farmers show their gratitude towards nature for the crop and animals for their help. It is also known as kite festival. People enjoy these goodies while flying the kites.
Every festival is incomplete without food, sankranthi is also no exception. But for this festival we make some special dishes like ariselu, sweet pongal or chakkara pongal, nuvvu ladoo or til ladoo, some snacks too we make chakkalu, jantikalu or muruku. We exchange them with our neighbours and friends. These dishes can stay for a week or more. So sometimes we send them to our relatives who stay far away from home.
Here I will post a set of sweets and snacks. Hope all of you like them and will prepare them at home. Share your experiences with me while preparing them. Enjoy!! this festival season.
