Raita is a kind of pachadi or curry made with curd and a specific vegetable. These perugu pachadis are the best accompaniments for rice, roti or chapati. Baingan or Vankaya or eggplant is the king of vegetables. Any recipe made with baingan or vankaya tastes really good. This is a very simple recipe. We get big size eggplants or vankaya in winter season, I love to make chutney, bartha and pulusu pachadi with them. There is much cooking is involved in this recipe. Just roast a bainga or vankaya and make tadka and mix all of them to get a very tasty and yummy vanakaya perugu pachadi. That's it very simple and easy recipe.

Vankaya Perugu Pachadi Recipe

Vankaya perugu pachadi is the best accompaniment for rice, roti, and chapati.

Ingredients:
  • 1 Big Baingan/ Vankaya
  • 2 Cups Curd
  • 1 Tbsp oil
  • 1 Tsp Mustard Seeds
  • 1 Tsp Black Gram/Urad Dal
  • 1 Tsp Cumin Seeds
  • 1/4 Tsp Hing/Asafoetida
  • 2 or 3 Green Chillis
  • Salt to Taste
  • Fustful of Coriander leaves
  • 5 to 7 Curry Leaves
Procedure:
  1. Wash and wipe the baingan or vankaya.
  2. Apply oil all over the vankaya.
  3. Appling oil would help in roasting the baingan properly and it would stop burning of the skin of baingan.
  4. Place the baingan or vankaya on the stove top. directly on the gas burner.
  5. Roast the vankaya properly while rotating it using tongs in regular intervals.
  6. Roast the baingan in low to medium flame only.
  7. As the vankaya cooks completely it would become soft and mushy.
  8. While checking in between with the help of fingers, roast the baingan.
  9. Once done, allow this cool completley.
  10. We can put in chill water also to cool fast.
  11. Meanwhile heat oil in a kadai, add mustard seeds, cumin seeds and black gram.
  12. Let them splutter, add hing, and coriander leaves and curry leaves.
  13. In a mixing bowl add curd, salt and chopped green chillies.
  14. Mix them well. Add the above made tadka to it and keep aside.
  15. Once the roasted vankaya cooled, remove the skin.
  16. If the vankaya roasted well and uniformly, the skin can be removed easily.
  17. Mash it well.
  18. Mix the mashed vankaya with curd and tadka mixture.
  19. Serve vankaya perugu pachadi with rice, roti or chapati.

Bread Uttappam Recipe | How to make Bread Uttappam

Hi friends, Today's recipe is bread uttappam. Bread uttappam recipe is a very simple and easy. Breaduttappam is another instant breakfast recipe. Bread uttappam can be served with any spicy chutney or else we can serve with tomato ketchup.

This recipe of how to make bread uttappam I collected it from one of my vernacular magazine. Kids too liked the bread uttappam recipe. We can use any type of bread like Sandwich Bread or Whole Wheat Bread or Milk Bread. But I prefer to used sandwich bread as it gives a nice perfect taste. It takes longer time to cook, so one should have lot of patience to make it. I normally put a chair to sit while utappam cooks. :)

Now a days we are getting different varities of breads available but during our childhood days we used to get only one variety. And that too it was served with only butter or jam. As different varities of breads available to us we can make different varities of recipes also with bread like bread bonda and sandwiches. The measurements given in this makes around 14 to 16 medium sized bread pancakes/bread uttappams.

Bread Uttappam Recipe

Bread uttappam can be served with any spicy chutney or else we can serve with tomato ketchup.

Ingredients:
  • 6 to 8 Bread Slices
  • 1 Cup Rice Flour
  • Salt to taste
  • 1 Cup Sour Curd
  • 1 Onion finely chopped
  • 1 Tomato finely chopped
  • 3" long Ginger finely chopped
  • 2 to 3 Green chillis
  • 1 Tbsp Corinader leaves finely chopped
  • 1 Tbsp cumin seeds

  • Procedure:
    1. Take bread slices and make them small pieces into a large bowl.
    2. Add curd and mix it well.
    3. Allow this to soak for 20 mins.
    4. Meanwhile finely chop onion, tomato, green chillis, ginger and coriander leaves.
    5. We can mix everything and keep it ready. If you like you can add grated carrot also.
    6. After 20 mins put the soaked bread and rice flour into a blender jar.
    7. Blend it into a smooth batter.
    8. Add salt to taste and keep it aside.
    9. Heat dosa pan or griddle. Take a ladle full of batter and pour it.
    10. Spread it with the help of pan itself or gently spread it with the ladle itself.
    11. Cover and cook it in the low flame.
    12. Cook for one minute or till done and flip it.
    13. Cook for another minute on the other side.
    14. Again flip and check whether it is done or not by pressing gently with the spatula.
    15. Once it is done take it off from the tawa and serve.
    16. Serve bread uttappam with any spicy chutnye or tomato sauce.
