Peanut Ladoo -- How to make Peanut Ladoo -- Groundnut Ladoo Recipe

Today we will make Peanut ladoo which is a very simple and easy sweet. Obviously kids also love it and very good for health.  I have already posted one post on peanut laddu, but it is made with jaggery syrup. To make that we need to have some experience. Jaggery sryup string making is an art, some times it may get spoil. But this kind of ladoo have no chance of spoiling. 
This one I have learned from one of relative who is aTamilian, She makes it during Gokulashtami Festival.

Ingredients: 

  • Peanut/Groundnuts/Palli - 1 Cup / 100 grms
  • Jaggery: 1 Cup / 100 grms
  • Cardamom Powder - 1 tsp

Procedure:

  1. Dry roast peanuts. Roast them till they turn light brown shade or the aroma of them comes out.
  2. Do not over roast. Allow them to cool down.

  3. Grate jaggery. keep it aside.
  4. Once the peanuts cooled, peel the skin by rubbing them between hands.
  5. Grind them in a blender jar.

  6. Once they become coarse powder, add grated jaggery and grind it together.
  7. Grind it till jaggery and peanuts powder blended together well.

  8. Take this into a plate and make ladoo of it.
  9. Store it in an airtight container.

Lauki Kofta Curry -- Bottle Gourd Kofta Curry -- How to make Lauki Kofta Curry

Lauki Kofta Curry is a nice flavourful side dish for roti and rice. Kofta curries are veg dumplings cooked in onion and tomato gravy. They have rich taste. These dumplings are fried in hot oil and cooked in gravy and spices, served with naan, roti or plain basmati rice. We heard Malai Kofta curry and Paneer Kofta curry, but never about this in restaurants. Don't know the specific reason though. We do not even find it in every household. I got this recipe from one of my neighbourhood friend. She tries different ways to use lauki or bottle gourd other than making curry.

Ingredients:


Lauki Dumplings:

  • Bottle Gourd - 10" long piece
  • Salt - to taste
  • Red Chilli Powder - 1 tsp
  • Bengal Gram/Besan/ Fried Gram Flour - 2 tbsp
  • Garam Masala - 1 tsp
  • Green Chillies - 1
  • Oil - For Frying
For Gravy:
  • Onion - 1 Large
  • Tomato - 1 Large
  • Green Chillies - 2 
  • Cashew Nuts - 10 to 15
  • Ginger - 3" long
  • Garlic - 15
For Curry:
  • Mustard Seeds - 1 tsp
  • Cumin Seeds - 1 tsp
  • Salt - to taste
  • Red Chilli Powder - 1 tbsp
  • Garam Masala Powder - 1 tbsp
  • Coriander Powder - 1 tbsp
  • Turmeric Powder - 1 tsp
  • Lauki water - 1/2 cup 
  • Oil - 2 tbsp

Procedure:


Lauki Dumplings:
  1. Peel the skin and grate lauki. Chop green chillies.
  2. Squeeze and drain water and allow it to rest for five minutes.
  3. After five minutes again, drain excess water and squeeze it completely.  Keep this water for further use.
  4. Add salt, red chilli powder, garam masala and green chillies. 
  5. Mix well and add besan/ bengal gram to it.

  6. Combine well and make small dumplings of it.
  7. Heat oil in a kadai, slowly and gently drop each dumplings in to it.
  8. Fry them in low medium flame, till they turn golden brown color. 
  9. Drain them on paper tissues.

For Gravy:
  1. Chop onions, tomatoes, green chillies, garlic and ginger.
  2. Combine cashew nuts along with the above ingredients.
  3. Blend them and make smooth paste out it. Keep it aside.

For Curry:
  1. Heat oil in a kadai, add mustard seeds and cumin seeds.
  2. When they start spluttering add the gravy masala or paste.
  3. Fry till the aroma comes out. Add turmeric powder and salt.

  4. Add red chilli powder, coriander powder and garam masala powder.

  5. Now add lauki water and fried dumplings. Allow this to boil for five minutes.

  6. Serve Lauki Kofta Curry with roti, naan, jeera rice or bagara rice.

Missi Roti Recipe -- How to make Missi roti

Missi Roti
Missi roti is a healthy and traditional Punjabi recipe. I have the habit of buying Woman's Era and pick recipes from it. I have a good collection of them, when sorting them I had a glance at different varieties of roti making. I picked it from them.
I prefer to make such kind of rotis instead of making regular plain wheat flour ones. It is made with wheat flour and besan or chickpea flour combined with flavorful ingredients.Making them is very easy and takes very less time.

Serves: 2 people

Ingredients:

  • Wheat Flour - 1 Cup
  • Chickpea Flour - 2 Cups
  • Onion - 1 Large
  • Green Chillies - 2
  • Red Chilli Powder - 1/2 tsp
  • Ajwain - 1/2 tsp
  • Salt - to taste
  • Water - 1 Cup
  • Oil - For Cooking

Procedure:

  1. In a large bowl mix wheat flour and chickpea flour.

  2. Chop onion, green chillies.
  3. Add chopped onions, green chillies to it. Add salt, red chilli powder and ajwain.

  4. Mix well. Add water and make soft dough.
  5. Make soft and pliable dough. Add oil to it and knead well.

  6. Cover and allow the dough to rest for fifteen minutes.
  7. Divide it into equal portions of the dough. I got 9 of them. It may increase or decrease, depending on the size of the roti. 
  8. Roll them into round and thin chapatis of 6" diameter or even more of course, with the help of rolling pin.

  9. Heat tawa and place roti on it and cook for two minutes. 
  10. Once brown spots on it appears, flip and cook for two more minutes.

  11. Grease with oil or ghee and cook for a while.

  12. Serve hot missi roti with any pickle and curd.
