Okra or bhindi or bendakaya is good for health especially for memory. It has rich sources of dietary fibers. It also contains vitamin A, B, C and K. It also have minerals such as iron, magnesium, calcium and manganese. Bhindi stir fry is all time favorite to one and all. It is a very common dish for lunch in every house hold.

Ingredients:
- Okra/Bhindi/Bendakaya - 500 grms
- Salt - to taste
- Red Chilli Powder - 1 tsp
- Oil - 3 to 5 tbsp
- Mustard Seeds - 1 tsp
- Cumin Seeds - 1 tsp
- Bengal Gram - 1 tsp
- Red Chilli - 1
- Peanuts - 1 tbsp
- Garlic - 5 to 7
- Curry Leaves - 5 to 7
- Dry Coconut Powder - 1 tbsp
Procedure:
- Wash okra and wipe them with a dry kitchen cloth. If moisture on it is not wiped, while cutting and cooking we get gum stings.
- Mash the garlic in mortar and pestle with or without their skin. Normally I do it with skin only.
- Cut the edges of okra and chop them.
- Heat oil in a kadai till the fumes are up, fry little portions of okra pieces in it.
- Once they are fried, become soft and the color changes remove them from the heat. Keep them aside.
- Repeat it with the remaining pieces.
- Again heat oil, fry peanuts, mustard seeds, cumin seeds, bengal gram and red chillies. Then add curry leaves.
- Once they start spluttering add the above fried okra pieces.
- Saute them for a while, then add mashed garlic, dry coconut powder, slat, turmeric powder and red chilli powder.
- Mix well. Allow it to cook for five mins on a low flame. Keep stirring occasionally.
- Serve bhindi stir fry with rice.
