Louki Thepla -- Bottle Gourd Thepla -- Sorakaya Thepla -- Doodhi Thepla

Thepla is a Gujarati Cuisine. It is a kind of flat bread made with mixture of flours or whole wheat atta, pan fried and usually contains shredded vegetables. They are a little bit spicy. This recipe I have learned from a TV show. I found a nice way to use bottle gourd. If I make curry or  dal nobody likes and I need to market it, but now with these Theplas it's become easy for me to spend. 
Now coming to the dish, it is also very easy to make them. We need not have any accompaniment for them, still any pickle will do. 


Whole Wheat Atta - 1 cup
Bottle Gourd/Louki/Sorakaya - 1 cup, grated
Green Chillies - 3 chopped
Ginger-Garlic Paste - 1 tbsp
Salt - to taste
Curd - 2 tbsp
White Til - 1/2 tbsp
Ajwain - 1/2 tbsp


Add all the ingredients in a large bowl except curd. 
Do not rest the grated louki. 
Mix all of them without adding water and then add curd and mix it. 
Mix all the ingredients properly and knead the dough.
The dough should be like that of chapati dough. It should be neither too soft nor too stiff.
We can rest it for 5 to 10 minutes or else we can make them immediately. 
Make the dough into equal parts. Roll them into 5 - 6 " circle using rolling pin.
Use dry flour if necessary. 
Heat tawa and cook them on low flame till golden brown spots appear. Flip it and cook in the same way the other side also.
Once cooked add 1 tsp of oil on it and press it gently with the spatula. Flip it, add oil and press gently to cook the thepla fully. Fully cooked thepla do not have dry on it. 
Serve louki thepla with any pickle, onion and curd.
