Chow Chow or Chayote or Bengaluru Vamkaya is belongs to the gourd family. It is quite tasteless vegetable, but rich in Vitamin C and potassium and also very less calorie food. It is added in sambar and koottu Of course cooked as a curry and chutney also. Mainly it is a South Indian recipe.
We do not get them all over the year but only during this season. As we get them rarely whenever I get to see them I grab them immediately.
Fresh Coconut - 1 cup grated
Salt - to taste
Turmeric Powder - 1 tsp
Asafoetida - 1 tsp
Oil - 1 tbsp
Cumin Seeds - 1 tsp
Black Gram - 1 tsp
Bengal Gram - 1 tsp
Red Chillies - 1
Curry Leaves - 5 to 7
Pressure cook for two whistles, it is for easy cooking.We can steam it also to retain the texture. I prefer to steam it, though it takes 10 to 15 minutes time. While steaming add salt and turmeric powder so the vegetable get the proper taste.
Drain out excess water.
Heat oil in a kadai add ingredients under "For Tempering". When they splutter add the cooked chow chow to it. Fry for a while. Add grated coconut to it and mix well. Serve it along with challa mirapakayalu.

Mustard Seeds - 1 tspCumin Seeds - 1 tsp
Black Gram - 1 tsp
Bengal Gram - 1 tsp
