Beetroot Chutney

Beetroot is one of the best vegetable of root class. It has so many good qualities. It helps in reducing blood pressure and bad cholesterol.  It helps in treating anaemia and give quick relief from fatigue. It has the quality of generating calcium which is necessary for bones and teeth. Take one glass of beetroot everyday to keep the osteoporosis at bay. 
So,  if we keep talking about the qualities of beetroot, we need to have an extra page only for qualities of it. We can make so many recipes with it like curry combining with moong dal or coconut. Simple one is making juice or slice it and have it directly. We can make soup or kutu with it and also chutney. A very tasty and delicious recipe. Some people make sweet also with it.

Ingredients:

Beetroot-1 medium sized (grated)
Oil-2 tbsp
Mustard Seeds-1tsp
Urad Dal-1tsp
Fenugreek Seeds-1/2 tsp
Red chillies-5 or 6
Asafoetida-a pinch
Garlic cloves-5 or 6
Salt-to taste
Turmeric Powder-1tsp
Tamarind-5" piece

Procedure:

Peel the skin of the beetroot and grate it.
Heat oil in a kadai add mustard seed, urad dal fenugreek seeds and asafoetida. Once they start spluttering add red chillies and switch off the stove. Keep it aside for cooling. Again heat the kadai and put the grated beetroot and fry it till it looses its raw taste. Let it also cool. 
Grind the red chillies, some portion of tadka, tamarind, turmeric powder and salt. Add beetroot and garlic cloves to it and again grind it to make chutney. 
Serve it with hot rice.

Veg Omelette/All flours Omelette

This is my own invention. I don't know if anybody make this before or it is already known to people like dosa, idly. But, I only know when I made it with my own idea. I really don't know what shall I call this so I christened it as veg omelette. The appearance of this is like real omelette so I named it like that. :)

Ingredients:

Bengal gram powder/Besan -1 cup
Maida/All purpose flour - 1 cup
Wheat flour - 1 cup
Rice flour - 11/2  cup
Sour Buttermilk-1 cup
Onion - 1 medium sized(finely chopped)
Tomato-1 medium sized (finely chopped)
Green chillies-2 (finely chopped)
Curry leaves-5 or 6 (finely chopped)
Coriander leaves - 1tbsp (finely chopped)
Salt-to taste
Red Chilli powder-a pinch
Water-as needed

Procedure:

Mix all the flours and add sour butter milk to them. Add salt and red chilli powder. Keep it aside for half an hour.
After half an hour make thin batter while adding required water. The batter should be in thin and pouring consistency. 
Add chopped onions, tomatoes, green chillies, curry leaves and coriander leaves to the batter. Mix well. 
Heat dosa tawa/pan pour the batter and add one table spoon of oil to the dosa. Use a tumbler to pour batter on the dosa tawa.
Cook for 2 minutes or till done and flip the dosa and again cook for a while. Serve hot with tomato sauce.

Senagapappu Pachchadi/Bengal Gram Chutney

Ingredients:

Senagapappu/Bengal Gram - 1 Cup
Red Chillies-5 or 6
Garlic Cloves-5 or 6
Salt-to taste
Ghee-1tbsp

Procedure:

Heat ghee in a kadai add senaga pappu, red chillies fry them till they turn light brown. 
Let them cool, add garlic cloves, salt and grind them by adding water slowly. 
The chutney should be a little bit coarse. Serve it with hot rice and ghee.
Dilute this with adding more water and can be served with dosa.

Davva perugu pachchadi/Banana stem in curd

Banana stem or trunk normally called as Davva or Duta is really good for health. It is low in calories and rich in fiber. This is good for kidneys. 
To make any recipe with banana stem or davva we need to have lot of patience as we cannot cut them easily. First we have to cut them circularly and take out the extra fiber. 
To take out the extra fiber: we need to take it on to the right index finger and make circular movement of the finger while holding the fiber. This will remove the fiber. Repeat this with the entire pieces of  stem.
Collect three or four such pieces and chop them or cut them into small cubes. Once cutting is over put them in thin buttermilk, so that it will retain its colour. For cutting assistance follow the pictures.

Banana stem or Arati Davva- 5 inches
Salt - to taste
Curd-5tbsp
Oil-1tbsp
Mustard seeds-2tsp
Cumin seeds-1tsp
Urad dal-1tsp
Red chillies-2
Green chillies-3
Curry leaves-5 or 6
Asafoetida-1tsp

Procedure:

Cut the banana stem into small cubes.
Chop green chillies.
Add them to the stem pieces, Add curd to it.
Heat oil in a kadai put mustard seeds, cumin seeds, urad dal, red chillies, curry leaves and asafoetida. Once they start spluttering add this tadka to the above banana stem pieces and mix well. 
This can taken as it is or serve with rotis.
