Bagara Baingan Recipe -- How to make Hyderabadi Bagara Baingan Curry

Hi friends, Thank you all for vising my blog. Today I am posting how to make Bagara Baingan recipe.
Bagara Baingan
Hyderabad have some signature dishes like Bagara Baingan, Biryani, Kubhani ka Meeta, Double ka Meeta, Mirchi ka Salan and Onion Samosa etc.. They are very special to our own city Hyderabad. Bagara baingan is a curry made with small Indian Eggplants stuffed with some condiments. It is a good accompaniment for biryani and also roti. For making this curry we must choose smallest possible brinjals and let them be in uniform size. If we take small brinjals we need not stuff them. I should give credit to an aunt (sorry for not remembering her name)who taught me this dish during my early marriage days.

Bagara Baingan

Enjoy this spicy Bagara Baingan curry with Jeera Rice or Bagara Rice.

Ingredients:
  • 20 Small Baingan/Brinjal
  • 3 Tbsp Oil
  • Salt to Taste
  • 1 Onion
  • 2 Green Chillies
  • 1 Tsp Turmeric Powder
  • 1 Tsp Coriander Powder
  • 1 Tsp Garam Masala
  • 1/2 Tbsp Red chilli powder
  • 1 Tbsp Thin Tamarind Juice
  • 1 Cup Bagara Masala
  • 1 Tbsp Ginger Garlic Paste

Ingredients For Bagara Masala:
  • 1 Cup Peanuts
  • 1/2 Cup Sesame Seeds
  • 1/4 Cup Coconut Powder
Procedure For Baingan Masala:
  1. Heat the pan, dry roast peanuts till they turn brown.
  2. Add sesame seeds to it. And roast them till they splutter.
  3. Add coconut powder or fresh coconut also tastes good.
  4. Roast it also till it turn out to brown.
  5. Allow them to cool and grind them into a smooth paste.

Procedure:
  1. Slit the brinjal into four portions.
  2. Chop onion and green chilli into lengthwise.
  3. Heat oil a kadai, add slit brinjal and saute them till become soft. Keep them aside.
  4. Againg heat oil in the same kadai, add mustard seeds, cumin seeds and clove and cinnamon stick.
  5. Fry them till they splutter, add chopped onions and green chillies.
  6. Saute them till the onions become translucent and soft.
  7. Add salt to fasten this step.
  8. Add turmeric powder, coriander powder and garam masala. saute it for a minute.
  9. Add ginger garlic paste and saute it for 3 mins.
  10. Add thin tamarind juice and mix it well.
  11. Add red chilli powder to it.
  12. Add bagara masala and combine well.
  13. Add sauteed brinjal to it and add 1 cup water.
  14. Allow this to boil till the brinjal cook completely.
  15. Serve bagara baingan with jeera rice or bagara rice. It goes well with roti also.
