Laddu - Boondi Laddu

 Laddu is a special sweet made in marriages in Andhra Pradesh. It is the most important sweet in marriages and will be distributed among friends. To make laddus we need to have a laddle which specially meant to make boondi. Normally it is called 'Boondi laddle' in Andhra Pradesh. It is a perforated plate with a lengthy handle. 


For Boondi:

Besan - 1 cup
Water - as per requirement
Oil - for frying boondis

For Sugar Syrup:

Sugar - 1 1/2 cup
Water - 1/4 cup 
Cardamom Powder - a pinch


For Boondi:

Heat oil in a pan.
Add water to besan and mix well. Be careful while adding water. While adding water check the consistency of the batter with a spoon or finger. 
Drop little batter in the hot oil with the help of spoon or index finger, if it falls with out any tails,  this will make good round shaped boondi. 
Add water till we get such a round shaped boondi. 
Don't panic if the batter is too loose, just add some more besan. 
Hold the boondi laddle on the top of the hot oil and with the help of another laddle pour batter over it and let the boondis fall on oil. Fry them till they are half fried and transfer them on to tissue paper.
Do not fry boondis too crispy.

For Sugar Syrup:

In a thick bottomed vessel mix water and sugar. Dissolve sugar in water and boil it. Stir occasionally, be careful, do not burn. 
Once sugar dissolves and allow it to boil till the sugar syrup reaches one string consistency. 
To check it, touch it between index finger and thumb and pull it. It should form a string. 
Switch off the stove at this stage. Keep it aside. 

For laddus:

Add the prepared boondis to the sugar syrup. Add cardamom powder. 
Make laddus when the boondi is enough warm to handle with the hands.
Press and roll the boondi to make laddu. The sweet and yummy laddus are ready to serve.
